Physiologists call this the cephalic phase of digestion. Touch is one of its strongest activators. Think about how eating actually feels with a fork. You stab something, lift it, put it in your mouth. You never felt its temperature. Never registered the texture. Your stomach had zero preparation for what just landed in it. That heaviness after meals, the bloating, the sluggish feeling. Part of that is your gut playing catch-up because it got no advance signal. A study in the Journal of Agricultural and Food Chemistry found that stainless steel leaches nickel and chromium into food, with concentrations jumping up to 26-fold depending on acidity and steel grade. That research focused on cookware, but your fork and spoon are the same metal, touching acidic food at mouth temperature three times a day. Forks have been on Western tables for roughly 250 years. Before that, the Church condemned them as vanity. Billions of people across India, Ethiopia, the Middle East, and Southeast Asia never adopted them.
